Ingredients
- 50ml Brockmans Gin
- 15ml Bianco Vermouth
- 15ml Homemade Spice Honey Syrup
- 1 bar spoons Homemade Orange Marmalade
- Top with White Chocolate Foam
Method
- Pour 50ml Brockmans Gin in a tin, and add 15ml Bianco Vermouth then add 15ml Homemade Spiced Honey Syrup and a bar spoon of Homemade Orange Marmalade
- Shake and double strain into a coupe glass
- Top with Homemade White Chocolate Foam
- White Chocolate foam*: 100g White Chocolate (melted), 100ml Milk, 1 Egg White --> Charge in a siphon
- Spiced Honey syrup**: 100ml water, 3pcs cinnamon sticks, 5pcs cloves, 3pcs star anise --> Boil and simmer for 15 minutes. Dilute honey by simmering water 1:1 ratio
- Homemade Orange Marmalade***: 100g oranges chopped, 300ml water, stick of cinnamon, and 2 cloves --> Simmer until reduced to half. Add 75g of white sugar
