Ingredients

  • 37ml Brockmans Gin
  • 25ml Lejay Crème de Cassis
  • 50ml Fresh grapefruit juice
  • 4 drops Grapefruit bitters
  • 25ml Homemade Fever tree tonic reduction
  • 1 unit Egg white

Method

  1. Add 1 egg white into your Boston shaker
  2. Squeeze 50ml of fresh grapefruit into the glass
  3. Pour 37.5ml of Brockmans and 25ml of Lejay Crème de Cassis in
  4. Add 25ml of homemade Fever-Tree tonic reduction
  5. Add 4 drops of grapefruit bitters
  6. Add ice and wet shake all ingredients. Remove ice and then dry shake to achieve foam
  7. Strain into a chilled coupe and top with a dash of soda
