Ingredients
- 37ml Brockmans Gin
- 25ml Lejay Crème de Cassis
- 50ml Fresh grapefruit juice
- 4 drops Grapefruit bitters
- 25ml Homemade Fever tree tonic reduction
- 1 unit Egg white
Method
- Add 1 egg white into your Boston shaker
- Squeeze 50ml of fresh grapefruit into the glass
- Pour 37.5ml of Brockmans and 25ml of Lejay Crème de Cassis in
- Add 25ml of homemade Fever-Tree tonic reduction
- Add 4 drops of grapefruit bitters
- Add ice and wet shake all ingredients. Remove ice and then dry shake to achieve foam
- Strain into a chilled coupe and top with a dash of soda
