Brockmans Rhubarb Crumble

Ingredients

  • 25ml Brockmans Gin
  • 50ml Brockmans Gin (infused with Strawberries & Raspberries)
  • 12.5ml Lemon Juice
  • 50ml Rhubarb puree
  • 25ml Custard Foam
  • 12.5ml Sugar Syrup
  • 2 units egg white
  • 4 bar spoons crumble

Method

  1. Begin with adding 25ml Brockmans Infusion* to shaker, with 25ml Brockmans, 12.5ml lemon juice, 50ml rhubarb puree
  2. Shaken with ice
  3. Pour over ice into glass
  4. Adding 2 egg whites, 25ml custard, 12.5ml sugar syrup and 25ml Brockmans Infusion to the dispenser
  5. Shake with 1 gas canister, remove and add a second to thicken the foam
  6. Pour over the top of drink to around 1.5cm height
  7. Top with 4 bar spoons of crumble onto foam
